FRIED RICE RECIPE

 Complements of the Season.

It's the season of merriment and alot of cooking.

We are here to take you through the stages of preparing a colorful and spicy dish of Fried Rice to be enjoyed by yourself and loved ones.

We apologize for weeks in break in transmission πŸ˜†... you know as a Corps member I must obey the Clarion call first.

Fried rice is a beautiful and colourful dish because it has a unique green colour when variety of colourful vegetables are added to it. 

It is also very nutritious specially because of the numerous nutrients it contains e.g carbohydrate from the rice, protein from the meat, vitamins and minerals from the vegetables.

Fried rice is also very delicious and is a wonderful combo with fried or grilled chicken washed down with chilled orange juice.

Ingredients:

8 pieces of chicken

4 cups of rice

Vegetable oil

Onions

Spring onions

Green peas

Sweet corn (1 tin)

Carrots

Green beans

Green pepper

Curry powder

Maggi( 4 cubes)

Salt ( to taste)

Pepper (cameroun type)

Fresh red pepper ( enough quantity to add colour to the food)

Fried rice spice

Kidney/ Liver/ Hotdog/Egg


Instructions/ Procedures

1. Parboil rice for 15mins or wash rice with salty water to reduce starch.

2. After parboiling wash and drain the rice using a sieve.

3. Put chicken into a pot, season using diced onions, maggi, salt, curry and pepper.
Mix properly and leave for 5 minutes for the seasoning to be absorbed by the chicken.
Cook the chicken till desired tenderness adding little water when needed.

4. Drain the chicken leaving the chicken stock then fry or grill the chicken till desired taste.

5. Wash raw vegetables using salty water to remove all debris.

6. Dice onions, spring onions, carrot, green pepper and fresh pepper into desired size.

7. Dice the kidney/ liver/ hotdog ( this means any of the three could be used) into desired size.
Egg could also be used and in this case the egg should be broken and whisked.

8. Put 3 cooking spoons of vegetable oil into a pot, add the kidney/liver/ hotdog and fry.

9. Add the carrots, green pepper, green peas, fresh pepper, spring onions, onions and sweet corn and continue frying.
If egg is being used instead of kidney/liver/hotdog add at this point and fry for about 10 mins.

10. Put down vegetables from fire.

11. Put the chicken stock into another pot ( big enough to cook the fried rice) and put the pot on fire.

12. Add the parboiled rice to the pot.

13. Add maggi and salt to taste.

14. Add one teaspoon of cameroun pepper.

15. Add curry and fried rice spice.

16. Cook the mixture till rice is soft and add water if needed.

17. When desired texture is achieved and water added is almost dried, add the fried vegetables and mix properly on a low heat till water is dried.

18. Food is ready. Serve with grilled or fried chicken and enjoy.
