Ofe Nsal-White soup- Recipe by Amaechina Chiamaka Ozioma
Ofe Nsala (White soup) is a native soup of the Igbos, from the Eastern part of Nigeria, Ofe Nsala offer a break from palm oil and very rich in essential nutrients needed for our body. Ofe Nsala and Pounded Yam is a nice combo for lunch or dinner. For those who love peppery meals like me try this wonderful dish.
8 pieces Chicken
1 medium size smoked fish
Ground dried pepper ( Cameroon type for a better taste)
Ground Crayfish (2 tablespoon) Ground Uziza seeds (1 teaspoon)
2 pieces crushed Uda Few slices of uziza leaves 1-2 tablespoon of yam flour or 3 pieces of yam
(to be cooked and then pounded for thickening the soup)
Water
Maggi ( to taste)
Salt ( to taste)
Procedures
1. Wash, season and steam chicken with pepper, salt and maggi.
2. Add pieces of yam when the chicken is getting soft, take out when cooked and pound for thickening the soup.
3. After the yam has been pounded and the chicken is almost cooked, wash fish and add to the pot with spices ( ground uziza seeds and crushed uda) and crayfish.
4. Add more water to the pot and check seasoning at this point.
5. Add the pounded yam and cook till the soul is thickened as desired. If you are using yam flour, dissolve it first in cold water to form a paste before pouring into the soup water.
6. Stir well to prevent the pounded yam or the paste from forming a big lump in the pot.
7. Lastly add the sliced Uziza leaves. Cook for 2-3 minutes and soup is ready.
8. Serve with pounded yam or any other swallow of your choice.
