Hi everyone, I would be writing a series for my fellow Corps members and other readers. The series would consist of breakfast, lunch and dinner. It would also be loaded with nice combo dishes that contain essential nutrients needed by our body. I would be starting with a nice combo dish for breakfast and it would be cooked yam with egg sauce. Yam is a rich source of carbohydrate while the egg sauce contain nutrients rich in protein, vitamins, fats & oil and vitamins so you see its a balanced diet😉. The combo is also affordable considering our pockets... I am a Corper so I can relate with our pockets 😎.

Ingredients

4-5 slices of Yam
2 medium sized eggs
6 pieces of fresh tomatoes (or 1 sachet of tomato paste but fresh tomatoes are preferable for a better taste)
2 pieces of fresh red pepper (or ground dried pepper)
Maggi ( to taste)
Salt ( to taste)
I bulb of onion
Groundnut oil



Procedures

1. Peel the outer layer of the yam and  wash the yam properly.

2. Pour 2 cups of water into a pot, add yam. Add a pinch of salt to the water.

3. Put the pot on fire and allow the yam to cook till it is moderately soft.

4. Sieve out the water from the yam to prevent the yam from getting soaked.

5. Put the cooked yam in a food flask to retain its warmth.

6. Rinse the pot and drain.

7. Break the eggs into a soup plate and beat using a fork or egg whisk.

8. Cut the fresh tomatoes, fresh pepper and onions into smaller pieces.

9. Dry the pot using heat then pour one medium sized cooking spoon of groundnut oil into the pot.

10. Add the chopped onions, tomatoes and pepper.

11. Add maggi and salt to taste (not too much oh)

12. Stir and allow to fry for few minutes.

13. Add the egg and allow to cook for 4 minutes.

14. Stir mixture properly, check seasoning and egg sauce is ready😋.

15. Serve with the cooked yam and enjoy.
