Okro soup Recipe

Hi people , I am here with the second part of my series. It is a combo of Eba or any other swallow of your choice with okra soup for lunch. Okra soup is one of the quickest and easiest Nigerian soups to prepare and it is also very cheap considering our pockets. Okro is loaded with lots of nutrients like vitamins, minerals, fats and oil e.t.c. . It is very delicious😋 and my favorite especially when combined with Ogbono.

Ingredients÷

Okra (like 100 naira own)
Red palm oil
Beef  (or Iced fish; this is optional depending on your pocket size but it adds flavour)
Stock fish (Okporoko)
Dry fish (Panla)
Ground crayfish ( 2 tablespoon or more)
Ground dried pepper ( cameroun type for better taste)
1 bulb of onion
Vegetable ( Pumpkin or Spinach leaves popularly  known as Ugwu)
2 Maggi cubes

Procedure ÷

1. Boil hot water, pour into a bowl, add the stock fish and dry fish leave to soak for a while then wash properly with water and salt.

2. Cut the Okra into tiny pieces. The more the size reduction the more
the soup will draw. You can achieve this by making a few vertical cuts followed by the horizontal cuts then slice across.

3. Wash the vegetable leaves with salt and water very well, cut into tiny pieces.

4. Wash the beef with salt and water properly.

5. Put the beef into a pot, add the soaked stock fish and dry fish and add 2-3 cups of water just enough to boil the beef.

6. Add the onions, maggi, salt and pepper then cook the beef properly.

7. Pour two cooking spoons of red palm oil into another pot and put on fire. Add the diced okra and fry to kick start the drawing process.

8. Add some of the beef from time to time till you notice the okra starts to draw. This process should take a minimum of 5 minutes to  avoid overcooking the okra.

9. Now add the vegetable and stir well. Add all the remaining beef, fish, pepper and salt. Add crayfish. Stir well then check seasoning.

10 Cover the pot and leave to simmer for 5 minutes and soup is ready.

11. Serve with Eba or any other swallow of your choice and enjoy.
